<p><span style="font-size: 16px;">牛屎饼，不是饼，只是形状像饼，却又比大号的烧饼还要大几圈，用牛粪做成，是从前老百姓家里当柴火烧锅的一种燃料。在那物质及其匮乏的年代里，极富智慧的乡村老百姓为了生存，找到了用牛粪做燃料的诀窍，于是也不知道从哪个朝代开始就有了做牛屎饼的活儿。</span></p><p><span style="font-size: 16px;"><br/></span></p><p><span style="font-size: 16px;">记忆中我们这里做牛屎饼的牛粪不是捡来的，而是生产队里负责放牛的人，把从牛棚里、牛草垛旁的牛粪收集起来的。当时，几乎每个牛棚的前面都有几个小丘似的牛粪堆子。积存到一定的时候，生产队里就要按户按人口分牛粪，一堆一堆的牛粪分摊在场上，收工后，各家各户领到了牛粪，用粪桶一趟又一趟地挑回家。</span></p><p><span style="font-size: 16px;text-align: justify;">牛粪摊在家门口的空地上，要上水浸泡一夜，等第二天收工后，家人才有时间来做这个既脏又累的活儿。</span><span style="font-size: 16px;text-align: justify;">首先，要将浸泡松软后的牛粪翻几翻，然后脱掉鞋，挽起裤管，双脚不停地在腐烂的牛粪里踩踏，将牛粪踩黏糊。</span></p><p><span style="font-size: 16px;"><br/></span></p><p><span style="font-size: 16px;">牛粪踩黏糊后，一家人都会捋起袖子，用双手将绒抖抖的牛粪做成一块块铅球大小的粪团，再用双手一个一个地托着，贴到房前屋后的土墼墙上。贴到墙上的牛屎饼，还要用穰草把子压一压。这是一个不可或缺的过程：一是防止牛屎饼粘得不牢，容易掉下来；二是用穰草把子压过的牛屎饼，表面凹凸不平，而后烧锅时容易点燃和充分的燃烧。那时，家家户户的土墼墙上，几乎都贴着这黑褐色的“大烧饼”，一排排、一块块，形成了那个年代独特的乡村风景。</span></p><p><span 16px;">那一块一块的牛屎饼，在土墼墙上经过几十天的风干后，再一块一块地被从墙上扒下来，堆放到雨水淋不着的地方，当个宝贝似的收藏着留到大冬天里烧火做饭。</span></p><p><span style="font-size: 16px;"><br/></span></p><p><span style="font-size: 16px;">听老人说，用牛粪做的牛屎饼，也有好与差之别：因水牛夏天和秋天吃的是嫩草，没有冬天里吃的枯穰草拉出来的粪便粗糙，相对而言，只有用冬天的牛粪做成的牛屎饼，燃烧起来火力才带劲。其实，夏天牛在室外活动，能收集到的牛粪很少，还是冬天的牛粪多。</span></p><p><span style="font-size: 16px;"><br/></span></p><p><span style="font-size: 16px;">用风干了的牛屎饼烧锅，要先把牛屎饼呈八字形架在灶膛里，然后用穰草或麦草引火。不一会儿，牛屎饼就会被引燃，旺旺的火苗舔着锅底，发出红中泛蓝的火光，映照在人的脸上，总是那么的祥和。牛屎饼燃烧时，散发出来的气味，也不像先前贴在土墼墙上风干时散发着的臭味儿了。而一旦进了灶膛燃烧起来，整个屋里弥漫的是一种淡淡的枯草的香味。有了这一块块牛屎饼，全家人就能安安稳稳地度过整个大冬天，享受到热茶热饭带来的温暖。</span></p><p><span 16px;">牛屎饼燃烧起来是文火，煮出来的饭粥柔软喷香。据说，乾隆皇帝下江南时，有一天去农家微服私访，肚子饿了的时候突然闻到香喷喷的米粥味，于是食欲大增。主人热情地盛给这个毫不相识的人吃，乾隆皇帝毫不客气地吃了几大碗，连说：好吃，好吃！笑问主人这是什么粥，主人回答说是牛屎粥。回到京城后，乾隆皇帝对“牛屎粥”的美味念念不忘，下令御厨做牛屎粥给他吃。那些宫廷御厨们如坠云雾，不知道什么是牛屎粥，也做不出牛屎粥。为此，乾隆皇帝非常生气，一连换了好几个御厨都无济于事。这或许是个野史笑话，不过，用牛屎饼做燃料烧出来的饭粥，吃在嘴里确实的柔和弥香。</span></p><p><span 16px;">黄昏中，忙碌一天后的人们纷纷回到沿河而住的农舍，家家户户炊烟袅袅，空气中弥散着牛屎饼燃烧后的清香。温饱是那个年代里人们心目中最简单、最温暖的奢求，曾经酸涩的往事——土墼墙上牛屎饼，它给贫瘠的乡村人带来过希望，它也无法从人们的记忆中抹去。</span></p><p><span style="font-size: 16px;"><br/></span></p><p
